Today we are making a delicious vegan roasted sweet potato salad. This salad is rich in flavors and I know vegans and non-vegans will love it very much.
Am roasting the sweet potato in an oven but if you have a grill stove it can also roast the potatoes nicely as well. I encourage you to set a timer as you’re roasting the potatoes, this will help prevent the potatoes from burning.
In today’s recipe, we need ingredients like; 2 pounds of sweet potatoes, 1½ tablespoon of extra virgin olive oil, ½ teaspoon of onion powder, 1⁄4 teaspoon of garlic powder, ¼ teaspoon of smoked paprika, and ½ teaspoon of black pepper. All these ingredients are to season or marinate the sweet potatoes
For the salad ingredients I am using; 1 ½ cups of canned black beans, ¼ cups of finely chopped cilantro, red onion, sliced avocado, red bell pepper, and 1 cup of feta cheese.

For the salad dressing ingredients am using; 1 cup of vegan mayonnaise, 2 tablespoons of apple cider vinegar, 1 teaspoon of dijon mustard, 2 cloves of minced garlic, 3 tablespoons of finely chopped parsley, ¼ teaspoon of salt, and ¼ teaspoon of salt.

2 pounds of sweet potatoes ( 907 grams), peeled and cut ¾ inch
1 ½ tablespoon of extra virgin olive oil
