2 kgs of Smoked Sausage
2 cups ketchup
â…” cup light brown sugar
¼ cup Worcestershire sauce
2 Tablespoons each of butter and dried onion flakes

Cut the smoked sausage into 12 inch thick medallions. Cook until a light crust forms on the sausage in a large pan over medium-low heat.
Remove the sausage medallions and drain them with a kitchen paper towel.
Allow butter to melt in the heated skillet. Mix together the remaining barbecue sauce ingredients well.
Bring to a boil over medium-high heat. Reduce the heat to medium-low and continue to cook for another 5-10 minutes.
Then stir the smoked sausage medallions into the sauce to coat them.
In a slow cooker, keep heated.

Firstly, dry the meat with a paper towel. To taste, drizzle each pork chop with olive oil and season with BBQ rub (I use around 1 teaspoon olive oil and 12 teaspoons rub on each side of each pork chop).
Then preheat the grill pan, gas grill, or coals to medium-high heat. Brush the grill with oil to keep the pork from sticking. Cook for 6 minutes on each side (for thick boneless chops) or refer to the cooking time schedule above for other cuts. When the pork reaches an internal temperature of 145° F, it is ready. For the last 3 minutes, baste with barbecue sauce.
Then place the chops on a chopping board and let them for 5 minutes to rest. The additional sauce can be served on the side.
