2 pounds of red potatoes (908 grams)
340 grams of streaky baconÂ
1 small onion, diced
1 teaspoon of salt, for boiling potatoes
½ cup of fresh parsley, finely chopped
For The Salad Dressing
½ cup of apple cider vinegar
1 tablespoon of granulated sugar
1 tablespoon of dijon mustard
2 cloves of garlic, minced
½ teaspoon of salt
¼ teaspoon of black pepper

Firstly, scrub the red potatoes well, and cut any large potatoes in half so that all the potatoes are equally sized.
Secondly, place the red potatoes in a large saucepan and add cold water to cover the potatoes, add one teaspoon of salt and boil the potatoes, and cover the saucepan with a lid.
Thirdly, boil the red potatoes on high heat for 30 minutes until tender when pierced with a fork.
Meanwhile, cut the bacon into inch pieces, place the bacon on a large skillet and cook it over medium heat for about 6 to 8 minutes until it’s crispy and golden brown.
Remove the crispy bacon from the skillet and place it on a plate lined with a kitchen paper towel. Leave the remaining bacon fat on the skillet.
Then dice and saute the onions in the bacon fat on the skillet until soft and transparent. Remove sauteed onions and keep aside
Similarly on the same skillet with the bacon fat, add the apple cider vinegar, granulated sugar, dijon mustard, salt, and pepper to make a hot salad dressing.
 Bring the mixture to a simmer for five minutes on medium heat, stir the minced garlic into the mixture and cook for a minute until the garlic turns light brown. Turn off the heat.
