Baked Oatmeal Cups

3 cups of oats
1 teaspoon each of baking powder and vanilla extract
½ teaspoon ground cinnamon
â…“ cup of sugar
½ cup of applesauce
1 ½ cups milk
2 large eggs
3 tablespoons of melted butter

Steps to follow
Preheat the oven to 350 degrees F. Spray a little cooking spray on the muffin molds.
In a large mixing basin, combine the oats, baking powder, cinnamon, brown sugar, applesauce, milk, eggs, butter, and vanilla extract.
Stir until everything is completely combined.
Fill the muffin tin halfway with the oatmeal mixture.
Preheat oven to 350°F and bake for 20-25 minutes, or until golden brown. Wait for about 6 minutes for the muffins to cool before you remove them from the mold and onto the rack to cool.Â
Serve with maple syrup and fruit on the side, if preferred.
Honey Sesame Chicken Lunch Bowls

Honey Sesame Sauce:
¼ cup each of chicken stock, light soy sauce, and honey
1 tablespoon sesame oil
½ teaspoon red pepper flakes
1 teaspoon cornstarch
Chicken Lunch Bowls:
2 cups of cooked rice
2 tablespoons olive oilÂ
3 cups each of chopped broccoli and snap peasÂ
2 large chicken breasts cut into cubes
salt & pepper
sesame seeds
Steps to follow
Set aside after combining all of the ingredients for the honey sesame sauce in a shaker.
Cook the rice as directed on the packet. Divide the mixture into four storage containers. Then heat 1 tablespoon of olive oil in a frying pan.Â
Broccoli and snap peas should be added at this point. Cook for 6 minutes, or until the vegetables are brilliant green and soft. Fill the storage containers with rice.
1 tablespoon olive oil is left in the pan. In the same pan, add the chicken. Season with salt and pepper, as well as red pepper flakes if preferred (if desired). Cook for 8 minutes, or until well done.
Stir in the sauce and cook for 2 minutes, or until it has thickened.
Drizzle the sauce over the chicken in the lunch containers. If desired, sprinkle with sesame seeds.
Refrigerate for up to four days. To serve, reheat the dish.
