Today we have come up with a recipe for macaroni salads (the anti pasto salad), it is very easy to make. It is not only easy to make but also very delicious. This delicious salad could be served on any occasion of your choice. The same salad can be served for both lunch and dinner.
In this recipe, we are going to use pepperoni but you can substitute pepperoni with salami. We are using kalamata olives in this recipe. However, green and black olives can be used.

Ingredients For Macaroni saladsÂ
2 cups of macaroni pasta
1 cup of cherry tomatoes
¼ cup of kalamata olives
1 small red onion
½ cup of slices pepperoni or salami
¼ cup of fresh parsley, finely chopped
2 tablespoons of basil
1 red bell pepper
1 yellow bell pepper and then,
2 tablespoons of grated parmesan cheese
For The Macaroni Salads Dressing
½ cup of extra virgin olive oil
¼ cup of balsamic vinegar
½ teaspoon of garlic powder
1 clove of garlic, minced
1 teaspoon of dried oregano
¼ teaspoon of black pepper and then,
1 teaspoon of kosher salt
Steps To Follow For The Anti Pasto Salad
Firstly, in a saucepan add about 6 cups of water and 1 teaspoon of salt and bring it to a boil, add the macaroni to the boiling water and cook until al dente or follow the instructions on the macaroni packet.
Secondly, drain the water in a colander and rinse the macaroni with cold water.
Wash and chop the red bell pepper, yellow bell pepper, basil, parsley, and cherry tomatoes.
Meanwhile, make the salad dressing.
Then whisk together to combine the extra virgin olive oil, balsamic vinegar, garlic powder, dried oregano, and black pepper in a large bowl.
In a large bowl, add the macaroni, cherry tomatoes, kalamata olives, red onion, pepperoni or salami, parsley, basil, red bell pepper, yellow bell pepper, and parmesan cheese.
Then pour the salad dressing over the ingredients in the large bowl and mix generously until well blended.
Store the salad in a refrigerator to chill for at least 1 hour before serving.Â
