Heat the oil to 375 degrees Fahrenheit. Use a digital candy thermometer for reading the degrees of the oil.
Place your finger to close off the end of the funnel, then pour ½ cup of the funnel cake mixture into the funnel.
Carefully hold the funnel over the hot canola oil and remove your finger, move the funnel in a circular pattern to allow the cake mixture or batter to fall in a swirling motion into the hot oil.
If you do not have a funnel, pour ½ cup of cake mixture or batter into a measuring cup. Then slowly drizzle the cake mixture into oil in a slim stream, swirling and crisscrossing the mixture over itself.
Then fry the funnel cake for 2 to 3 minutes on each side until golden brown.
Remove the funnel cake from the oil using tongs, then place it on a plate lined with a kitchen paper towel to drain any excess oil.
But you have to repeat the same process with the remaining cake mixture or batter and make sure to fry at the right temperature.
Lastly, dust the funnel cake with powdered sugar, and add whipped cream, fresh fruit, and chocolate syrup if desired. Serve warm and enjoy.
