Thai beef salad

Ingredients
- 1½Tablespoons of lime juice
- 1 garlic clove, crushed
- 1 tablespoon each of chopped palm sugar and fish sauce
- 2 teaspoons each of sesame oil and grated ginger
- 1 teaspoon of soy sauce
- 700grams of beef rump steak
- 200 grams of grape tomatoes
- 1 cucumber and a red onion
- 2 long red chilies (chop them and remove the seeds)
- 1 bunch each of fresh mint, coriander, and basil
- ⅓ cup of toasted peanuts
- 4 shredded kaffir lime leaves,
Steps to follow for one of the easy dinner Recipes (Thai Beef Salad)
Firstly, whisk together lime juice, garlic, fish sauce, sesame oil, soy sauce, ginger, and palm sugar in a jug. Put your steak in a bowl and drizzle with half the dressing. Cover with cling film and put the bowl in your fridge. Let the steak rest there for about 2½ hours.
Then preheat a barbecue grill or chargrill pan on high. Cook steak on the grill for 3 minutes on each side for medium or until cooked to your liking. Transfer to a plate. Cover with foil and set aside for 10 minutes to rest.
Lastly, combine the tomato, cucumber, onion, chile, mint, coriander, basil, peanuts, and lime leaves in a large mixing bowl. Add the steak to the salad after thinly slicing it against the grain. Then drizzle the remaining dressing over the salad and toss lightly to mix. Serve immediately by dividing the salad among the bowls.
Curried sausages
Some of the names of these easy dinner recipes are just tempting. You can’t resist this one.
Ingredients for easy dinner recipes (Curried Sausages)
- 1 tablespoon each of olive oil and curry powder
- 800g thin beef sausages
- 1 large brown onion, thinly sliced
- 2 sliced carrots and crushed garlic cloves
- 3 tablespoons of fruit chutney
- 2 cups of chicken stock
- 1 cup of frozen peas
Steps to follow
Firstly, heat the oil over medium-high heat in your large pan. Cook sausages in batches for 5 to 6 minutes, flipping halfway through, or until browned all over. Place on a big platter.
Then combine the onion, carrot, and garlic in a large mixing bowl. Cook for 5 minutes, stirring occasionally, or until onion is softened. Toss with the curry powder. Cook for 30 seconds, stirring constantly, or until aromatic.
Combine the fruit chutney and stock in a large mixing bowl. Replace the sausages in the pan. Bring to a boil, covered. Reduce the heat to a medium-low setting. Cook for 25 minutes, uncovered, or until sausages are cooked through and the sauce has thickened.
Lastly, add the peas and mix well. Season. Cook for 1 to 2 minutes, or until well cooked. Serve with steaming rice and parsley leaves on top.
