Comforting food varies from person to person. But today we are going to look into some general comforting food that works for a lot of people.Â
People eat comfort for so many reasons. You could be going through a bad break up and you need some comforting.
As mentioned before on this blog, we do not advise that you substitute real therapy for comfort foods.
However, this does not mean we can’t whip up these easy comfort food recipes once in a while to feel good.

Ingredients for easy comfort food recipes (Chicken Parm Casserole)
Non-stick cooking spray
220 grams of pasta
2 cups of shredded rotisserie chicken
1½ cups of tomato sauce
1 teaspoon each of dried parsley, basil, and oregano
¼ teaspoon of salt
â…› teaspoon each of black pepper and dried red pepper flakes
1 cup shredded mozzarella cheeseÂ
2 tablespoons of grated Parmesan cheese
¼ cup of bread crumbs
Steps to followÂ
To begin, preheat the oven to 350 degrees. Using nonstick cooking spray, coat an 8-inch square baking dish.
Toss the pasta, chicken, 1 cup tomato sauce, parsley, oregano, basil, salt, black pepper, and red pepper flakes in a medium mixing bowl.
Then fill the baking dish halfway with the mixture. Spread the remaining half cup of tomato sauce evenly over the dish with the back of a spoon. Mozzarella cheese, Parmesan cheese, and bread crumbs should be uniformly distributed.
Bake for about 25 minutes, or until the top is bubbling and golden brown.

170 grams of dry rice noodles
½ cup each of canned pumpkin and water
2 tablespoons each of rice vinegar and chopped peanuts
1 tablespoon each of sugar, peanut butter, and chili sauceÂ
2 cups each of shredded cabbage and shredded cooked chicken
1 cup of cooked shelled edamame
½ cup of fresh cilantroÂ
¼ cup of sliced green onions
crushed red pepper
lime wedges for garnishing
Steps to follow
Firstly, combine the noodles in a large mixing basin. Cover with enough boiling water to come halfway up the side of the pot. Allow it to stand, stirring regularly, until softened but still somewhat chewy, as directed on the box.
Then drain the noodles and cut them into smaller sizes.
To make the sauce, combine the pumpkin, water, vinegar, brown sugar, peanut sauce, and chili sauce in a mixing bowl.
Fill four tiny glasses with the sauce.
Lastly, arrange noodles, cabbage, chicken, edamame, and cilantro in four dishes. Sprinkle green onions, peanuts, and crushed red pepper on top. Place sauce cups in dishes one by one. Serve with lime wedges on the side.
