- 500grams of boneless skinless chicken, cut into bite-size pieces
- 250 grams of pad Thai noodles
- Â 2 tablespoons of peanut oilÂ
- 3 large eggs
- 6 chopped green onions
- 2 cups of mung bean sprouts
- 2 cloves of minced garlic
- 1/4 cup of brown sugar
- 1/4 cup of dark soy sauce
- 1/4 cup of lime juice
- 2 tablespoons of fish sauce
- 1 tablespoon of creamy peanut butterÂ
- 4 teaspoons of chili-garlic sauce
- 1/3 cup each cilantro
- 1/3 cup each chopped peanuts
Instructions
This wonderful masterpiece just takes a few minutes to prepare and a few more minutes to cook before it’s ready to eat!
Firstly, place the noodles in a dish with enough cold water to completely cover them and soak for 25 to 35 minutes, or until they soften.
Combine the ingredients for the sauce in a separate bowl and put it aside.
Then season the chicken with salt and pepper and sauté it in a wok or a big deep skillet over medium heat until it is mostly done about 3 to 5 minutes.
Now add the garlic, green onions, and bean sprouts and simmer for 1 to 2 minutes, stirring constantly. Then scramble the eggs in the center of the pan until hard, then combine everything.
Then drain the noodles, then add them to the pan with the sauce, stirring lightly to combine everything. Cook for 3 to 5 minutes more. Take care not to overcook the noodles, and thin up the sauce with a few tablespoons of water if it gets too thick.
