Caramel Apple Cheesecake Bars Recipe

- 3 medium granny smith apples, peeled, cored, and finely chopped

- 2 large eggs

- 1 cup of light brown sugarÂ
- ½ teaspoon of vanilla extract
- 3 tablespoons of salted butter
- ½ cup of heavy cream

Instructions
- Firstly, preheat the oven to 350 degrees Fahrenheit. Line a 9*8-inch pan with aluminum foil and lightly grease the aluminum foil with a non-stick cooking spray.
- Secondly, in a small bowl, add the chopped apples, two tablespoons of sugar, cinnamon, and nutmeg mix gently to combine.
- Thirdly, make the streusel. In a medium-sized bowl, whisk together to combine 1 cup of light brown sugar, 1 cup of all-purpose flour, 1 cup of salted butter, ½ teaspoon of cinnamon, and ½ cup of quick-cooking oats.
- Furthermore, make the crust. In a separate medium-sized bowl, combine 2 cups of all-purpose flour, ½ cup of brown sugar,¼ teaspoon of salt, and ½ teaspoon of cinnamon. Cut in the butter with two forks until the mixture is evenly crumbly and well combined.
- Then carefully press the crust into the 9*8-inch pan. Bake it for about 10 minutes or until lightly browned around the edges.
- In the meantime, make the cream cheese layer. In a large-sized bowl, add the cream cheese, and ½ cup of granulated sugar, and beat them using an electric hand mixer until smooth.
- Â Add the eggs one by one and add vanilla. Mix until they are well combined, scraping down the edges of the bowl as required. After mixing pour them over the warm crust.
- Stir the apple mixture with a spoon and pour it over the cheesecake layer. Bake for 30 to 35 minutes until the filling is well set.
- At this time, make the caramel sauce. In a saucepan set on medium-low heat, add 1 cup of light brown sugar, ½ teaspoon of vanilla extract, 3 tablespoons of salted butter, ½ cup of heavy cream, and ⅛ teaspoon of salt.
- Bring the mixture to a gentle simmer and cook while stirring for 6 to 8 minutes until slightly thickened.Â
- Add the vanilla extract and cook for an additional minute for it to thicken further. So the sauce will continue to become thick as it cools.
- Then cool the bars to room temperature.
- Lastly, drizzle the bars with caramel topping. Serve cold and enjoy.
